RECIPE:
Grilled Vegetables with Rich & Sassy

This recipe uses the robust flavors of Famous Dave's Rich & Sassy BBQ Sauce to spice up your grilled vegetables!
SERVES: 4
Ingredients
Vegetables
2 lbs. Small potatoes, cut into quarters
1 lb. Asparagus
1 Quartered Red Onion
1 lb. Zucchini, halved length wise
1 Sliced Red Bell Pepper
1 Cup of Sliced Cherry Tomatoes
Marinade
1/2 Cup Light Olive Oil
1 Cup White Balsamic Vinegar or Rice Wine Vinegar
1/4 Cup Famous Dave's Rich & Sassy BBQ Sauce
1/4 Cup Sweet Chili Sauce
2 Tbsp. Lemon Juice
2 Tbsp. Dijon Mustard
1 Tbsp. Minced Garlic
1 tsp. Salt
Vegetables
2 lbs. Small potatoes, cut into quarters
1 lb. Asparagus
1 Quartered Red Onion
1 lb. Zucchini, halved length wise
1 Sliced Red Bell Pepper
1 Cup of Sliced Cherry Tomatoes
Marinade
1/2 Cup Light Olive Oil
1 Cup White Balsamic Vinegar or Rice Wine Vinegar
1/4 Cup Famous Dave's Rich & Sassy BBQ Sauce
1/4 Cup Sweet Chili Sauce
2 Tbsp. Lemon Juice
2 Tbsp. Dijon Mustard
1 Tbsp. Minced Garlic
1 tsp. Salt
Preparation
- Wash all vegetables
- Tenderize potatoes by boiling them for a few minutes
- In a bowl, combine all Marinade Ingredients, mix well
- Pour Marinade into 2 Gallon Plastic Bag, add in all veggies except tomatoes
- Marinate for 2 hours at room temperature
- Remove veggies, drizzle with Olive Oil and Salt & Pepper to Taste
- Place veggies on the grill, if needed use a grilling basket
- Grill veggies until lightly charred
- Serve on platter with cherry tomatoes mixed in
