RECIPE:

Famous Dave’s Pork Butt

Ingredients

2 Pork Butts

2 Apple Juice Concentrate

Brown Cane Sugar

Canning Salt

Franks Hot Sauce

Dark Brown Cane Sugar

Turbinado Raw Sugar

Apricot Preserves

Kahlua

 

Georgia Mustard BBQ Sauce

Rib Rub Seasoning

Rich & Sassy BBQ Sauce

Sweet & Zesty BBQ Sauce

2 Pork Butts

2 Apple Juice Concentrate

Brown Cane Sugar

Canning Salt

Franks Hot Sauce

Dark Brown Cane Sugar

Turbinado Raw Sugar

Apricot Preserves

Kahlua

Rib Rub Seasoning

Rich & Sassy BBQ Sauce

Sweet & Zesty BBQ Sauce

Preparation

Step 1

In a large mixing bowl add: apple juice, apple juice concentrate, a few tablespoons of canning salt, a few tablespoons of Franks Hot Sauce, and 1/4 cup of Dark Brown Cane Sugar and stir until combined.

Step 2

Add the marinade to a meat injector. Leave the fat cap on the pork butt for maximum juiciness, and flip the pork butt over so the fat cap is underneath. Then inject the marinade into the pork butt. Make sure to evenly marinade every inch of the meat.

Step 3

Then baste the marinaded pork butt with Famous Dave's Georgia Mustard Sauce. Rub a handful of Dark Brown Cane sugar, and a handful of Famous Dave's Rib Rub Seasoning. Season the meat at the very end with some Turbinado Raw sugar to caramelize the pork butt.

Step 4

Smoke the pork butt for about 9 hours. The meat should be caramelized, and fall apart tender. Let the pork butt rest for an hour, then chop the pork to create chopped pork.

Step 5

In a large mixing bowl add 50-50 of Famous Dave's Rich & Sassy sauce, and Sweet & Zesty sauce. Add a few tablespoons of apricot preserves, and a few shots of Kahlua to taste. Add sauce to the chopped pork and serve.
